STEP 1
Preheat oven to 400 degrees F.
STEP 2
Toss carrots with olive oil, salt and pepper.
STEP 3
Roast in a single layer on a foil lined cookie sheet for 20 minutes, tossing halfway through, or until cooked and lightly browned but not mushy.
STEP 4
Sprinkle cooked carrots with pecans and parsley and serve hot.
