Loaded Chocolate Chip Oatmeal Cookies
Preparation
STEP 1
In the bowl of a stand mixer with paddle attachment or in a large mixing bowl with an electric mixer, beat the butter and brown and white sugar until well combined, about 2 minutes, making sure to scrape down the sides.
STEP 2
Add egg and vanilla and mix just until combined.
STEP 3
In a separate large bowl, mix together all-purpose flour, oat flour, baking soda, cinnamon, and salt and stir to combine.
STEP 4
Add the dry ingredients to the wet ingredients and stir just until combined.
STEP 5
The mix in the chocolate chips, walnuts and oats.
STEP 6
Cover and chill dough overnight, or at least 2 hours.
STEP 7
Preheat oven to 350 degrees F.
STEP 8
Prep two baking sheets with parchment paper. Scoop heaping tablespoon sized balls 1-2 inches apart onto the paper.
STEP 9
Bake for 11-13 minutes or just until the edges start to brown. The cookies will firm as they cool; do not over bake. Cool on the baking sheet for 10 minutes, then finish cooling on a cooling rack.

- 1 stick (½ cup) unsalted butter, softened
- ¼ cup light brown sugar
- ½ cup granulated sugar
- 1 large egg, room temperature
- 2 teaspoons vanilla
- ¼ cup Pereg Natural Oat Flour
- 1 cup semi-sweet chocolate chips
- ½ cup chopped walnuts
- 1 cup old fashioned oats
