Green Pea Fritters
Preparation
STEP 1
Combine all ingredients through black pepper in a medium bowl and mix together. Add water while mixing just until a dough forms. Refrigerate for 15 minutes.
STEP 2
When ready, form dough into 1-inch balls and flatter slightly into patties. Set aside on parchment paper.
STEP 3
Heat a deep sauté pan over medium-high heat and add 1-inch oil. Heat until an oil thermometer reads 350 degrees F. Prepare paper towels next to the pan.
STEP 4
Fry half of the patties at a time for 2-3 minutes per side until golden brown. Remove with a slotted spoon and drain on paper towels and sprinkle with salt immediately. Repeat with other patties.
STEP 5
Garnish with sour cream, diced tomatoes and cilantro and serve hot.

Cook time: 10 minutes
